Welcome to Royal on the ParkWe are excited to announce our latest achievement in the culinary space of South-East Queensland.  On November 8th 2021 our Walnut Restaurant was awarded the prize of ‘Best Hotel Restaurant’ and within our kitchen brigade we are now fortunate to have, ‘Chef of the Year’ within our senior leadership team.We now have a unique opportunity to add to our brigade two full-time positions of Sous Chef (Banqueting) and a Chef de Partie to join our progressive team. If you are looking for an opportunity to grow your career, then we would welcome you to become part of our Royal Team.What we need from you:To be considered for these roles, each candidate will possess appropriate trade qualifications, as well as significant experience within the hospitality industry. Each position is expected to drive the team forward in an encouraging and motiving manner, by using your strong communication skills to develop positive relations with both internal and external stakeholders.Sous Chef (Banqueting)Relevant trade qualifications, Certificate 3 in commercial cookery as a minimum.Know HACCP fundamentals, monitor food safety closely and have recently completed (I’m alert) food safety training.Proven ability to lead and manage a banquets kitchen, as well as the ability to step into an ala-carte role when needed.Confident in executing and coordinating multiple functions at the same time.Demonstrated ability to run a well organised kitchen with a focus on daily operations as well as the ability to coach and mentor junior brigade members.Liaise with the Executive Chef to develop a range of menus that will reflect our recent achievements whilst maintaining the hotels reputation of innovative cuisine.Flexibility to work around a varying roster including weekends, nights and public holidays.The ability to manage and run the kitchen in the absence of the Executive Chef.Chef de PartieCertificate 3 in commercial cookery.Confidence and proficiency in all sections of a kitchen.Demonstrated communication skills, both written and verbal.An ability to monitor and maintain consistent standards relating to quality, presentation and hygiene.An eye for detail and presentation, along with a passion for creating exciting and high-quality food.The ability to manage, train and develop junior staff.Prior experience in developing new dishes, concept ideas, menus and products.What we offer in return:The successful candidates will enjoy excellent working conditions, competitive salaries, career development and training opportunities.
